I will be arriving to Vietnam (Ho Chi Minh City) as a tourist in the beginning of October and staying nearly 2 weeks. I will leave the country to travel for an additional 1-2 months. Then I must enter the country again to fly back to Canada. I would be entering the country 2 times. Can I get two single entry visas or must I get the 3 month multiple entry visa?

In your case, both one 3 month multiple entry visa and two separated 1 month single entry visas are available. However, two single entry are cheaper (30 USD for two single entry visas comparing to 52 USD for 3 month multiple entry visa). Moreover, two single entry visa can be processed at the same time, as soon as you fix the date of each entry.
